Charmane’s Frittata

Paired with Charmane’s Bread Dip

Ingredients

  • Extra virgin olive oil (for sautéing)

  • 4 oz. mushrooms, sliced

  • ½ medium onion, chopped

  • ½ red bell pepper, chopped

  • 2 c. cooked potatoes, chopped

  • 2 Tbsp. Salt Sisters Charmane’s Bread Dip

  • 2 tsp. garlic, minced

  • 1 lb. sausage, cooked and chopped

  • 8 eggs

  • ½ c. heavy cream

  • 1 c. sharp cheddar cheese, shredded

  • Sea salt and freshly ground black pepper, to taste

Directions

  1. Preheat oven to 350°F. Heat a drizzle of olive oil in a large oven-safe skillet (cast iron recommended) over medium-high heat. Sauté mushrooms until browned.

  2. Add onion and red bell pepper and cook until softened.

  3. Stir in cooked potatoes and season with Charmane’s Bread Dip and black pepper. Let the potatoes crisp slightly, then reduce heat to medium.

  4. Add garlic and chopped sausage, cooking for 2–3 more minutes to combine all flavors.

  5. In a mixing bowl, whisk together eggs, heavy cream, sea salt, and pepper until smooth.

  6. Pour egg mixture into the skillet over the veggie and sausage mixture. Let cook undisturbed for 4–5 minutes, until edges just begin to set.

  7. Sprinkle shredded cheddar over the top and transfer the skillet to the oven. Bake for 10–15 minutes, until the frittata is set and the cheese is melted.

  8. Let cool for a few minutes before slicing into wedges and serving.
