Healthy Winter Salad

Fresh, colorful, and full of flavor, this hearty winter salad brings together a little bit of everything: sweet roasted sweet potatoes, juicy blueberries, creamy avocado, and crunchy greens. Topped with shredded chicken and finished with a sprinkle of our Everyday Seasoning Salt, it’s a simple and nourishing meal that works for lunch, dinner, or meal prep.

Ingredients

  • 1 medium sweet potato, chopped into bite-sized chunks
  • 1 Tbsp. avocado oil
  • Salt Sisters Everyday Seasoning Salt, to taste
  • 5 c. spring greens or spinach
  • 2 c. red cabbage, thinly sliced
  • 2 c. shredded chicken (rotisserie recommended)
  • 1 large avocado, peeled and diced
  • 1 pint blueberries
  • ½ c. dried cranberries
  • ½ c. grated Parmesan cheese
  • 3 Tbsp. pumpkin seeds
  • ½ c. red onion, thinly sliced

Directions

  1. Preheat the oven to 400°F. Place chopped sweet potatoes on a baking sheet, drizzle with avocado oil, and season with Everyday Seasoning Salt. Toss to coat and spread into a single layer.
  2. Roast for 20 to 25 minutes, shaking the tray halfway through, until sweet potatoes are golden and tender. Let cool to room temperature or chill in the refrigerator if preferred.
  3. Add greens, red cabbage, shredded chicken, avocado, blueberries, dried cranberries, Parmesan, pumpkin seeds, and red onion to a large mixing bowl.
  4. Add the cooled sweet potatoes and drizzle with your favorite dressing. Toss gently with tongs to combine.
  5. Serve immediately or store in an airtight container for meal prep.
