Ingredients
For the Lemon Cups
4 large lemons
For the Cheesecake Filling
8 oz cream cheese, softened
1 cup whipped topping (or freshly whipped cream)
¼ cup powdered sugar
2 tbsp fresh lemon juice
1 tsp lemon zest
½ tsp vanilla extract
½ tsp Salt Sisters Lemon Sea Salt
For Garnish
Crushed shortbread cookies or graham crackers

Fresh mint leaves (optional)
Instructions
- Slice the lemons in half lengthwise and carefully scoop out the flesh, creating 8 lemon cups. Pat the inside dry with a paper towel and chill until ready to use.
- In a medium bowl, beat the cream cheese until smooth.
- Add the powdered sugar, lemon juice, lemon zest, vanilla, and Salt Sisters Lemon Sea Salt. Mix until fully combined.
- Gently fold in the whipped topping until light and fluffy.
- Spoon or pipe the cheesecake filling into the prepared lemon halves.
- Chill for at least 1 hour before serving.
- Just before serving, garnish with crushed shortbread or graham cookies, a sprinkle of lemon zest, and a light pinch of Salt Sisters Lemon Sea Salt.
