Lemon Sea Salt Shortbread Cookies

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- ½ cup powdered sugar
- 1 tbsp fresh lemon zest
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp Salt Sisters Lemon Sea Salt (for the dough and for finishing)
Instructions
Step 1: Make the Dough
In a large bowl, beat the butter and powdered sugar until light and fluffy. Mix in the lemon zest and vanilla extract.
Add the flour and ½ tsp Lemon Sea Salt. Mix until a soft dough forms.
Step 2: Chill
Shape the dough into a log about 2 inches thick. Wrap in plastic wrap and refrigerate for at least 1 hour.
Step 3: Bake
Preheat the oven to 325°F.
Slice the dough into ¼-inch thick cookies and place on a lined baking sheet. Bake for 14–16 minutes, or until the edges are lightly golden.
Step 4: Finish
While the cookies are still warm, lightly sprinkle with Lemon Sea Salt and dust with powdered sugar.
Allow to cool before serving.
