Ingredients
- 2 pre-baked flatbreads
- Olive oil, for brushing
Tuscan Cream Cheese Spread
- 8 oz cream cheese, softened
- 2–3 tablespoons Salt Sisters Tuscan Farmhouse Blend
- 1–2 tablespoons plain Greek yogurt or sour cream (optional, for a smoother texture)
- 1–2 teaspoons lemon zest (optional)
Summer Veggie Toppings
- 1 small zucchini, thinly sliced
- 1 small yellow squash, thinly sliced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- ½ cup roasted red peppers, chopped
- 1 small handful fresh basil, torn
- 1–2 tablespoons olive oil
- Fresh lemon juice, for finishing
Optional Garnishes
- Extra Tuscan Farmhouse Blend
- Red pepper flakes
- Shaved Parmesan
- Crumbled feta cheese
Instructions
Step 1: Make the Tuscan Cream Cheese Spread
In a medium bowl, combine the softened cream cheese, Salt Sisters Tuscan Farmhouse Blend, Greek yogurt or sour cream (if using), and lemon zest. Mix until smooth, creamy, and well combined. Set aside.
Step 2: Prepare the Flatbreads
Preheat your oven to 425°F.
Place the flatbreads on a baking sheet and lightly brush each with olive oil. Bake for 5–7 minutes, just until warmed through and slightly crisp around the edges. Remove from the oven.
Step 3: Build the Base
Spread a generous layer of the Tuscan cream cheese mixture evenly over each warm flatbread, using the back of a spoon to reach the edges.
Step 4: Add the Vegetables
Top each flatbread with the zucchini, yellow squash, cherry tomatoes, red onion, and roasted red peppers. Arrange the vegetables evenly so every bite is full of fresh flavor.
Drizzle with olive oil and finish with a squeeze of fresh lemon juice.
Step 5: Finish and Serve
Scatter torn basil over the top and sprinkle with additional Tuscan Farmhouse Blend if desired.
For even more flavor, add a pinch of red pepper flakes for heat or finish with shaved Parmesan or crumbled feta cheese.
Slice and serve immediately.
