Ingredients

2–3 lbs Yukon gold potatoes, peeled and diced

1 c. heavy cream

¼ c. unsalted butter

4 cloves garlic, lightly crushed

3 sprigs fresh thyme

Freshly ground black pepper

1 c. white cheddar cheese, grated

2 Tbsp. chopped chives
Directions

Place diced potatoes in a large pot and cover with cold water. Add a generous pinch of Pink Himalayan Mineral Salt.

Bring to a boil, then reduce to a simmer. Cook for 20–30 minutes, or until the potatoes are fork-tender. Drain well.

In a small saucepan, heat the cream, butter, garlic, thyme, and a pinch of salt over medium heat. Warm gently—do not boil.

While potatoes are still warm, mash using a potato masher or large fork.

Strain the warm cream mixture and gradually stir it into the potatoes until fluffy and smooth.

Fold in the grated white cheddar and chopped chives. Taste and season with additional salt and black pepper as needed.
